artisan, located in The Biscuit Factory – the UK’s largest arts, craft and design gallery – will be serving up its wild and foraged chef’s tasting menu from Wednesday 5 July, priced at £45 per person.

The tasting menu, which changes every month, celebrates an ingredient, a type of cooking or time of year.

July’s offering from award-winning head chef Andrew Wilkinson gets under way with an Amuse Bouche and Wild Salmon and Crab Ravioli, with Sea Herbs and Sorrel. A serving of Mackerel with Cucumber, Buttermilk and Apple is then followed by Goosnargh Duck, Turnip, Lavender and Apricot.

To finish, diners can indulge in Gooseberries with Yoghurt, Elderflower and Almond; and Aerated White Chocolate with Raspberries, Passionfruit and Lime. A selection of French and British cheeses is also available for a £6 supplement.

The à la carte restaurant, which features in the current Good Food Guide and will be taking part in this summer’s Newcastle in the Sky dining event, launches its tasting menu on the first Wednesday of every month which is then available to pre-book all month long. A vegetarian tasting menu is also available.

In the coming months, diners can look forward to specially-crafted tasting menus inspired by British classics and fruits of the forest.
