artisan, located in The Biscuit Factory – the UK’s largest arts, craft and design gallery – serves up its summer picnic-inspired chef’s tasting menu this June.
The menu, created by artisan’s award-winning head chef Andrew Wilkinson, celebrates an ingredient, a type of cooking or time of year.
Andrew says: “Our tasting menu for June features luscious ingredients such as strawberries, apricot and elderflower, offset by the fresh flavours of asparagus, garden peas and fennel. Over the summer months, I like to keep things light, fresh and as natural as possible so that the ingredients can really sing from the plate.”
June’s tasting menu gets under way with the chef’s Amuse Bouche, followed by Crisp Pheasant’s Egg with English Asparagus, Burnt Onion and Hollandaise; Sea Trout with Garden Pea Nage, Mussels and Sea Vegetables; and then a serving of Sirloin of Dexter Beef with Roscoff Onion, Oxtail and St. George’s Mushrooms.
This is followed by Apricot Sorbet with Raspberry, Buttermilk and Wild Fennel; and Vanilla Burnt Cream with English Strawberries, Elderflower and Yoghurt. The meal is then rounded off with coffee or tea and a Rhubarb Jammy Dodger.
The à la carte restaurant, which features in the current Good Food Guide, launches its tasting menu on the first Wednesday of every month and – new for 2017 – it is then available to pre-book all month long. A vegetarian tasting menu is also available.
The summer picnic-inspired tasting menu is available from Wednesday 7 June and is priced at £45 per person. An optional wine pairing is priced at £25 per person. The menu must be booked in advance.
